Butternut Squash & Kale Salad

I don’t know how you’re doing during this pandemic but I’m having a very hard time with food!

I have Celiac disease and have a very hard time eating pre-packaged foods.  Almost all of our meals or dishes are made from fresh ingredients however during this self-isolating time I can’t go to the grocery store every day like I normally do.  So I’ve been trying to buy ingredients that either have a longer shelf life or I can freeze.

This Butternut Squash & Kale Salad from Little Broken is delicious.  You can either buy frozen squash or fresh squash and freeze it.  Onions have a long shelf life and so do the Granny Smith apples.  You may be thinking Kelly my Kale isn’t as firm as the week goes on.  Here’s a great article from Epicurious on how to store Kale in the fridge with paper towels to keep the firmness of the Kale.

This salad is great for lunch, enjoy!!
