Low Carb / Gluten Free Meal Plan For 3/8/21 – 3/14/21

I am not a nutritionist or a chef. I’m just a mom that knows what flavors I like and that my family likes. The recipes that I’m sharing this week are some that David has made for dinner. Others are taken from this cookbook that my family loves. I will share the changes or additions I’ve made to the recipes and what page the recipes are on. As a blogger I understand that the author of the cookbook makes her money/livelihood through book sales. I will not share the recipe on my blog. I hope my readers will understand this character decision for me. This is a great cookbook and I will be using it for the month. If you decide to follow my meal plan I hope that you’ll invest in this cookbook. It’s DELICIOUS ! If recipes are taken from another blog it will of course be a link directly to the recipe for your reference 

Monday – 10.8 total net carbs for the day

Breakfast – .1 net carbs

  • 2 scrambled eggs, 1 breakfast sausage patty (I like Owens) crumble sausage patty up in eggs when cooking. Mix in 1 Tablespoon of Kraft Cheddar Cheese. I like to call this a deconstructed breakfast burrito. It reminds me of Whataburger’s breakfast toquito 😋– .1 net carbs
  • Coffee (if you use cream try to use heavy cream there aren’t any carbs. If you use sugar or a sweetener try to use Stevia or a Swerve)

Lunch .4 net carbs

  • Tuna Salad: 1/2 cup of tuna chicken (I use this tuna), 1 teaspoon of dill relish, 1 teaspoon Hellman’s Real Mayonnaise (This is your healthy fat. There aren’t any carbs in the real Mayo) – 0 net carb
  • 1 cup of fresh spinach – .4 net carbs
  • Diet soda / Sparkling water with lime

Snacks – 2.5 net carbs

  • Deviled Eggs (cookbook page 100) 3 egg haves per serving .6 net carbs
  • Caprese Salad 1.9 net carbs

Monday Dinner (Meatless) – 7.8 net carbs

  • Tomato Basil soup. (Cookbook page 122) – 5.9 net carbs
  • 1 cup of fresh spinach tossed in light olive oil and sprinkled with Italian seasoning – .4 net carbs
  • Drop Biscuit: add 1 teaspoon of garlic powder to recipe. See cookbook page 72 -1.5 net carbs

Tuesday Dinner 7.4 total net carbs for the day

  • Ground Turkey Taco bowls: get 1pound package of ground turkey. Brown meat and use taco seasoning found in the cookbook page 271– 2.1 net carb
    • Use any of the following toppings
      • Daisy sour cream – 2 tablespoons 1 net carb
      • 1/2 avocado -1 net carb
      • 1/2 Roma Tomato – 1 net carb
  • Sautéed zucchini and squash: thinly slice zucchini and squash. Sauté in butter, sprinkle with salt and pepper. I really prefer Pink Himalayan Salt and FRESH cracked pepper. It gives it such a good flavor. 2.3 net carbs
  • Non-keto side: Quinoa (mix in a little bit of taco seasoning once you’re done cooking quinoa)

Wednesday Dinner – 7.2 total net carbs for the day

  • Chicken Thigh with avocado oil, salt and pepper : pour avocado oil on chicken. Massage onto chicken. Pour salt and fresh cracked pepper on top of chicken. Then massage / rub salt on pepper all over the chicken. Cook on 400 degrees for 40 minutes. Do not flip. – 0 net carbs
  • Easy cheesy caulirice see cookbook page 202. –2.7 netcarbs
  • Drop Biscuit – 1.5 net carbs
  • Non-keto side: canned green beans

Thursday Dinner – 7.9 total net carbs for the day

  • Barbecue Chicken Drumsticks ( cookbook page 174) 0.5 net carbs
  • Creamy Coleslaw(cookbook page 134) – 2.9 net carbs
  • Drop biscuit – 1.5 net carbs
  • Extra Side for Non-Keto: baby carrots boil in 1” of low sodium chicken stock and sprinkle with nutmeg. Boil until desired tenderness.

Friday Dinner 10.7 total net carbs for the day

  • Sheet pan garlic butter shrimp (cookbook page 168) -1.4 net carbs
  • Roasted Spaghetti Squash (cookbook page 204) 3.9 net carbs
  • This is my favorite white sauce for the spaghetti squash
  • Parmesan Asparagus (cookbook page 211) 2.4 net carbs

Saturday Dinner 8.8 total net carbs for the day

  • Pizza stuffed peppers (cookbook page 188) 2.8 net carbs
  • Dole American Salad – 2 net carbs serving size is 1.5 cups or 3 ounces
  • Kraft Ranch Dressing – 1 net carb serving size is 2 Tablespoons
  • Non Keto side: Corn on the cob

Sunday Dinner – 9.6 total net carbs for the day

  • Steak: seasoning with Lawry’s Seasoning and Worsterschire sauce. Evenly coat and grill to your preference on temperature. 
  • Parmesan Asparagus (cookbook page 211) 2.4 net carbs 
  • Easy Cheesy Caulirice (cookbook page 202) 2.7 net carbs
  • Drop Biscuit 1.5 net carbs
