Weekly Meal Plan for Monday, March 15 – Sunday, March 21

I am not a nutritionist or a chef. I’m just a mom that knows what flavors I like and that my family likes. The recipes that I’m sharing this week are some that David has made for dinner. Others are taken from this cookbook that my family loves. I will share the changes or additions I’ve made to the recipes and what page the recipes are on. As a blogger I understand that the author of the cookbook makes her money/livelihood through book sales. I will not share the recipe on my blog. I hope my readers will understand this character decision for me. This is a great cookbook and I will be using it for the month. If you decide to follow my meal plan I hope that you’ll invest in this cookbook. It’s DELICIOUS ! If recipes are taken from another blog it will of course be a link directly to the recipe for your reference

Monday – 15.6 total net carbs for the day 

Breakfast – 1.9 net carbs

  • Drop biscuit (cookbook page 72) 1.5 net carbs with 1 tablespoon of Philadelphia Cream Cheese .4 net carbs and everything bagel seasoning – 1.9 net carbs
  • Coffee (if you use cream try to use heavy cream there aren’t any carbs. If you use sugar or a sweetener try to use Stevia or a Swerve)

Lunch 1.4 net carbs

  • Egg Salad (cookbook page 130) – 1.1 net carb
  • 1 cup of fresh spinach – .4 net carbs
  • Diet soda / Sparkling water with lime

Snacks – 3.8 net carbs

  • Blue Diamond Rosemary Almonds – 2 net carbs
  • Celery Sticks (before cutting) 3 sticks 1.8 net carbs with Presidente Brie individuals 0 net carbs

Monday Dinner (Meatless) – 8.1 net carbs

  • Loaded Fauxtato soup. (Cookbook page 116) – 6.2 net carbs
  • 1 cup of fresh spinach tossed in light olive oil and sprinkled with Italian seasoning – .4 net carbs
  • Drop Biscuit: add 1 teaspoon of garlic powder to recipe. See cookbook page 72 -1.5 net carbs

Tuesday Dinner 12.1 total net carbs for the day

  • Ground Beef Taco Bowls: net carb
  • Taco Seasoning (cookbook page 271) 2.1 net carbs
  • Creamy Coleslaw (cookbook page 134) 2.9 net carbs
  • Extra side: Canned Corn (this is not low carb)

Wednesday Dinner – 15.3 total net carbs for the day

  • Chicken Thigh with truffle oil and Italian seasoning: pour truffle oil on chicken. Massage onto chicken. Pour Italian seasoning on top of chicken. Then rub all over. Put on a baking sheet. Cook on 400 degrees for 40 minutes. Do not flip. – 0 net carbs
  • Broccoli Cauliflower Salad (cookbook page 132) 5.3 net carbs
  • Extra side: brown rice (this is not low carb)

Thursday Dinner – 11.65 total net carbs for the day

  • Pork Chops: season with avocado oil and ranch seasoning , cover evenly. Cook in oven for 400 degrees for 40 minutes. – 0 net carbs
  • Zucchini noodles: sauté in butter and ranch seasoning – 4.55 net carbs a serving size is a 1/2 cup
  • Extra Side: Baby carrots cut up. Place on a lined baking sheet you can use these silicone liners or parchment paper. Cover carrots with olive oil. Sprinkle with swerve brown sugar. Cook on 425 for 25 minutes.

Friday Dinner 11.9 total net carbs for the day

  • Salmon Patty (cookbook page 186) – 2.8 net carbs
  • My version of creamed spinach: frozen chopped spinach. Cook spinach in chicken bullion. 1 cube with 1cup of water. Once spinach has cooked and there’s no more liquid in the pot put in butter and Parmesan Cheese. I used a tablespoon of butter and a tablespoon of Parmesan Cheese for every serving. Kricket loves her spinach this way. 2 net carbs
  • Extra side: Canned green beans

Saturday Dinner 13.6 total net carbs for the day

  • Roasted Turkey (cookbook page 190) 0.3 net carbs
  • Sausage cornbread dressing (cookbook page 208) 4 net carbs
  • Asparagus (cookbook page 211) use this recipe minus the cheese. Use Hollandaise sauce from Trader Joe’s 2.2 net carbs

Sunday Dinner – 8.6 total net carbs for the day

  • Steak: seasoning with Lawry’s Seasoning and Worsterschire sauce. Evenly coat and grill to your preference on temperature.
  • Easy Cheesy Caulirice (cookbook page 202) substitute broccoli for the cauliflower. 1.5 net carbs
  • Le Suer sweet peas: season with Worcestershire sauce and fresh cracked pepper
