Weekly Meal Plan for Monday, March 22 – Sunday, March 28

I am not a nutritionist or a chef. I’m just a mom that knows what flavors I like and that my family likes. The recipes that I’m sharing this week are some that David has made for dinner. Others are taken from this cookbook that my family loves. I will share the changes or additions I’ve made to the recipes and what page the recipes are on. As a blogger I understand that the author of the cookbook makes her money/livelihood through book sales. I will not share the recipe on my blog. I hope my readers will understand this character decision for me. This is a great cookbook and I will be using it for the month. If you decide to follow my meal plan I hope that you’ll invest in this cookbook. It’s DELICIOUS ! If recipes are taken from another blog it will of course be a link directly to the recipe for your reference 

Monday – 15.6 total net carbs for the day 

Breakfast – 1.5 net carbs

  • Drop biscuit (cookbook page 72) 1.5 net carbs with 1 scrambled egg and 1 slice of bacon – 1.5 net carbs
  • Coffee (if you use cream try to use heavy cream there aren’t any carbs. If you use sugar or a sweetener try to use Stevia or a Swerve)

Lunch 1.7 net carbs

  • Spinach Salad with hot bacon dressing (cookbook page 146) – 1.7 net carbs
  • Diet soda / Sparkling water with lime

Snacks – 2.6 net carbs

  • Kraft 2% string cheese – 0 net carbs
  • 1/2 cup or 52g of sliced cucumbers 1.6 net carbs with 2 Tablespoons of Kraft Ranch dressing (1 net carb)for dip – 2.6 net carbs

Monday Dinner (Meatless) – 8.2 net carbs

  • Broccoli and Cheese Soup soup. (Cookbook page 114) – 6.3 net carbs
  • 1 cup of fresh spinach tossed in light olive oil and sprinkled with Italian seasoning – .4 net carbs
  • Drop Biscuit: add 1 teaspoon of garlic powder to recipe. See cookbook page 72 -1.5 net carbs

Tuesday Dinner 16 total net carbs for the day

  • Slow Cooker Bourbon Chicken (cookbook page 180) 2.5 net carb
  • Caulirice (cookbook page 202) 2.7 net carbs
  • Fried Cabbage and bacon (cookbook page 194) 5 net carbs
  • Extra side: Gluten free tortilla (this is not low carb)

Wednesday Dinner – 13.6 total net carbs for the day

  • Bacon cheeseburger mini meatloaves (cookbook page 166)– 4.8 net carbs
  • Dole American Salad 2 net carbs + Kraft Ranch dressing 1 net carb = 3 net carbs
  • Extra side: canned green beans (this is not low carb)

Thursday Dinner – 15.2 total net carbs for the day

  • Open faced sloppy joes (cookbook page 150)– 3 net carbs
  • Roasted spaghetti squash (cookbook page 204)– 3.9 net carbs
  • Garlic butter roasted radishes (cookbook page 212)– 2.5 net carbs

Friday Dinner 15.2 total net carbs for the day

  • Gumbo (cookbook page 126) – 4.2 net carbs
  • Caulirice (cookbook page 202)– 2.7 net carbs
  • Hushpuppies (cookbook page 98)– 2.5 net carbs

Saturday Dinner 11.5 total net carbs for the day

  • Fried Chicken (cookbook page 183) 2.1 net carbs
  • Blistered Okra (cookbook page 216) 3.6 net carbs
  • canned creamed corn or whatever corn you like (this is not low carb)

Sunday Dinner – 15.3 total net carbs for the day

  • Steak: seasoning with Lawry’s Seasoning and Worsterschire sauce. Evenly coat and grill to your preference on temperature.
  • Easy Cheesy Caulirice (cookbook page 202) substitute broccoli for the cauliflower. 1.5 net carbs
  • Le Suer sweet peas: season with Worcestershire sauce and fresh cracked pepper
