You guys this was seriously the easiest creamed spinach! It maybe took me 7 minutes to make.
Last week I pulled back on the cooking. I normally make some type of meat, a roasted vegetable and now I’m making a casserole/fake carb for Kricket. I normally don’t eat the extra side and David normally has pasta or rice. So last week I made the loaded cauliflower casserole for Kricket and she ate on it all week. It was so nice! I only had to cook the vegetable.
During the week I try to do a really easy meat since it’s only Kricket and I and I try to save the more elaborate dinners for when David’s with us.
This creamed spinach is from our April Book Club pick. It’s on page 244 and only has 2.5 carbs. I also can’t believe how easy it was! The recipe only has 4 servings so I doubled the recipe so that I’d have enough for the week. Don’t forget to tag me on Instagram if you make this dish. I love to see your presentation 😍
