Weekly Meal Plan Monday, May 3rd – Sunday, May 9th

I am not a nutritionist or a chef. I’m just a mom that knows what flavors I like and that my family likes. The recipes that I’m sharing this week are some that David has made for dinner. Others are taken from this cookbook which is my May Book Club Pick. I will share the changes or additions I’ve made to the recipes and what page the recipes are on. As a blogger I understand that the author of the cookbook makes her money/livelihood through book sales. I will not share the recipe on my blog. I hope my readers will understand. This is a character decision for me. Keto Instant Pot is the May book and it’s not only a beautiful book but it has all kinds of recipes. I will be using it for the entire month of April. I hope you decide to join my book club as we cook our way through gluten free and low carb recipes. Sometimes we even have wine! !

Okay guys let’s do this!

Monday – 10.5 total net carbs for the day

Breakfast – 0.3 net carbs

  • Poached Egg – 0 net carbs (These are the egg cups that I use to get perfectly poached eggs every time! Bring 1″ of water to a boil on high. Set silicone egg cup in the water with the egg already in it. Make sure to really spray the silicone cup so that the egg doesn’t stick! Turn heat down to medium. Boil for 5 minutes covered. Remove egg cup with a slotted spoon. I put my Canadian Bacon on top of the egg and then flip over! It makes it a little easier 😉 )
  • Slice of Canadian Bacon – 0.3 net carbs
  • Coffee (if you use cream try to use heavy cream there aren’t any carbs. If you use sugar or a sweetener try to use Stevia or a Swerve

Lunch – 0.8 net carbs

  • Healing Bone Broth (cookbook page 320) 0.8 net carbs
  • Diet soda / Sparkling water

Snacks – 1 net carbs

  • English Tea with 2 Tablespoons of heavy cream and liquid stevia (it’s delicious!) 0 net carbs
  • Prosciutto wrapped mozzarella (I found these at Walmart) 1 net carbs

Monday Dinner (Meatless) – 8.4 net carbs

  • French Onion Soup 7 net carbs
  • Fresh Baby Spinach (0.4 net carbs for 1 cup) with Kraft Ranch Dressing (1 net carb for 2 Tablespoons) – 1.4 net carbs

Tuesday Dinner – 9.3 total net carbs for the day

  • Sausage Fajita Bowls (cookbook page 202) 3 net carbs
  • Cilantro Lime Cauliflower Rice (from April’s cookbook page 243) – 4.2 net carbs or use frozen cauliflower rice
  • Non-keto side: canned corn (I like to put a teaspoon of butter in and sprinkle garlic powder on it for extra flavor)

Wednesday Dinner – 7.3 total net carbs for the day

  • Easy Ruben Chicken (cookbook page 232) 3.8 net carbs
  • Fresh Baby Spinach (0.4 net carbs for 1 cup) with Kraft Ranch Dressing (1 net carb for 2 Tablespoons) – 1.4 net carbs
  • Extra Side: Canned Green Beans

Thursday Dinner – 9.1 total net carbs for the day

  • Chicken leg quarters: season with avocado oil, pink Himalayan salt and fresh cracked black pepper. cover evenly. Cook in oven for 400 degrees for 40 minutes DO NOT FLIP. – 0 net carbs
  • Alfredo Veggies (cookbook page 80) – 7 net carbs
  • Extra Side for Non-Keto: Brown rice 

Friday Dinner 11 total net carbs for the day

  • Sesame Chicken (cookbook page 226) – 2.9 net carbs
  • Cauliflower fried rice (from April’s cookbook page 242) 6 net carbs or you can get the Green Giant frozen fried rice just add some Gluten Free soy sauce!
  • Extra Side for Non-Keto Followers: Gluten Free Chicken or Veggie Egg Rolls

Saturday 7 total net carbs for the day

  • Lamb Vindaloo (cookbook page 150) 4 net carbs
  • Keto Rice (cookbook page 328) 0.9 net carbs
  • Extra Side for Non-Keto Followers: Roasted Carrots with Nutmeg

Sunday Dinner – 8.1 total net carbs for the day

  • Blue Cheese Steak Roll-ups (cookbook page 168) 1 net
  • Buttery Mushrooms (cookbook page 79) 2 net carbs
  • Mashed Cauliflower (cookbook page 330) 3 net
