Chick-Fil-A for the Win

This was just a last minute throw dinner together kind of night!

I was in Dallas and had been planning on going out to the lake (where David was planning on grilling steaks for dinner). So I did not thaw out any meat for dinner. If you can’t tell this is a common story in our house! Dallas got hit with a pretty bad storm and I DO NOT and most of the time WILL NOT drive in the rain. Several years ago I was in a wreck and that feeling of sliding is still with me.

So here comes 4PM and dinner is going through my mind … what am I going to make? Kricket has been pretty insistent on feeding herself so when I make these bowls they really seem to be a big hit with her because she can use her hand like a shovel. I find that the key is to get all of the ingredients to stick to each other. I decided to hit up Chick-Fil-A but early before the line was around the building, you know what I’m talking about! I ordered the 12 piece grilled chicken nuggets and a medium unsweet tea. That last one was for me … just wait for it!

I only give Kricket three nuggets chopped up the rest were for my dinner. So here’s what you need:

  • Grilled chicken chopped up
  • Creamed Spinach
  • Cauliflower Rice

I already had the creamed spinach in the fridge since this was the side that I made Kricket for the week. See I told you having one side made in a big batch comes in handy and less cooking at dinner time! The recipe that I used is from our April Book Club and it’s on page 244. If you didn’t see my post last week about this it takes under ten minutes to make.

Second, was the cauliflower rice. I already had this made and in the fridge from the Sushi Bowls that I made for lunch that day. You could use any frozen cauliflower rice just add some butter and garlic to get the same flavor. Brown fresh minced garlic in the butter then add the frozen cauliflower rice. The recipe that I used for my cauliflower rice is from the April Bookclub book and the recipe is on page 242.

I threw everything in a pot and heated it up together. The cream from the spinach was EVERYTHING! It really made the rice so delicious!
