I hope everyone had a WONDERFUL Memorial Day weekend! Not too much happened over here. My mom and stepdad came out to our lake house and we hung out. We had great food, lots of wine and laughs. (I made this delicious broccoli salad that I’ll post later in the week.) Sunday was gorgeous, Monday not so much. The rain … oh my gosh our yard look like a giant mud pit!

Kricket started to get fussy because I wouldn’t let her crawl around on the dock. 1. it was hot and 2. I could just see her crawling right off and going in the water! How was your Memorial Day weekend? Did you do anything fun?

If you’re following any type of low carb lifestyle then I feel like you’re always looking for a noodle replacement. I’ve tried everything out there and to tell you the truth the only one I have a REALLY hard time with are the Miracle Noodles. They’re 0 calories 0 carbs … I WANT to like them sooooo bad but I just can’t get over the texture! I’m a big fan of spaghetti squash as well as zucchini noodles. So, when I came across this recipe that used cabbage as the noodle I was VERY intrigued. This recipe is out of the May Book Club pick and it’s on page 84.

If you saw my TikTok or Reel last week than you know that Kricket and I were incredibly sick for a week and basically it took me another week to get my energy back so I haven’t been posting anything on my blog. As I sit here to write this I’m realizing that in my sick state I read the recipe wrong. I was getting ready to tell you that the recipe was a little spicy for my taste. As I’m going back through the recipe to write my review I’m looking at the ingredients and I realized that I used chili powder instead of cayenne pepper! Ah the things we do when we’re sick! I need to make this again because there’s absolutely nothing spicy in it!
