Good Morning Everyone! Since we’re going into the summer I thought I’d take a break from book club until August when everyone is back from summer break. I’ll still post meal plan ideas from the three books we’ve already used. Southern Keto, Simply Keto and Keto Instant Pot. I’ll still be cooking ALL summer and posting my reviews of the recipes and what I’ve changed to suit my families palate.
For anyone wondering why I do the book club / meal plans . . .
When I was diagnosed with Celiac disease and gestational diabetes all I wanted was for someone to tell me what to eat! I needed low carb for my diabetes and gluten free for celiac. Everyone said after I had Kricket my diabetes would go away. It didn’t and it actually got harder to control. My numbers were all over the place! My endocrinologist suggested following Keto.
I’d already been doing “clean” keto for a couple of years but my carb count was too high. When I say clean keto I mean I don’t sit down with a bowl of bacon chips. I use healthy fats in my diet. So I season meat with avocado oil, I put heavy cream in my afternoon tea. Stuff like that. I now eat 15 net carbs a day and am happy to report that at my last doctors appointment my A1c had dropped from 5.7 ( I was about to be put on medication) to now a 5.3.
I even asked if my diabetes had gone away! She told me no you’ve just learned how to control it. Honestly guys and I’m NOT bragging about this because I 100% believe that you need to exercise but I haven’t exercised in probably a year and a half. Granted I have a very busy and active day chasing after little Miss.
I used to get up at 4:30 am every morning to be at the gym by 5 am when they opened. I LOVED starting my day this way. I also found that by getting up and doing my workout it actually got done. If I tried to do it later in the day I always had an excuse or something came up and I couldn’t go.
I did two 30 minute cycles on the treadmill which came out to just over 5 miles. My knees are so shot from dancing my entire childhood and doing cheerleading. I set the speed to where I could be running but it’s really just a fast walk and holy moly it kicks your rear end! My family is Hispanic and Native American so our thighs tend to be a little larger! Lol which is why I loved this workout because it thins your legs like nobody’s business! Again I do NOT recommend not exercising but I will tell you eating right and being active is all I’ve been doing to maintain my weight and keep my numbers down.
Anyhow, I find that by planning out my food it helps keep me on track for my daily macros. I’ve had a bunch of people ask me what I eat and I kept emailing them my meal plan for the week. So I just started doing the blog and sending out email blasts that hey here’s the menu for the week. I was so overwhelmed by everything and started realizing that other people felt the same way. That’s why I do this. I do this because I know that I’m not the only one going, “JUST TELL ME WHAT TO EAT!” LOL
