Fried chicken was a summer staple in my house growing up. Whenever we went to the lake we got Kentucky Fried Chicken and headed out on the water. There was something about that combination that was AMAZINGLY delicious! So needless to say I have great memories with fried chicken! LOL There’s a big debate in our house over KFC and if you live in the DFW area there’s a restaurant called Bubba’s or Babe’s Chicken. David believes this is hands down the end all be all of fried chicken. I like KFC’s seasoning better. However, I can’t have either because of gluten and it’s not low carb.
I can’t begin to tell you how excited I was about this recipe. I’ve been wanting to make it for months but didn’t have the ingredients and kept putting off finding the whey protein. Everything I saw on Amazon was over $40 which just seemed like a lot to me when I didn’t even know if I was going to like this recipe. I found this unflavored whey (it’s zero carb) at The Vitamin Shoppe (it’s also 1/2 the size of everything else so I thought it was great to try) it’s on Amazon but I couldn’t get it fast enough for my blog post.
Last week I decided this was going to be my big story for the following week and I began working on this post. If you follow me on Instagram or TikTok then you know that I always do a video to show the making of the new recipe and my actual reaction to the recipe (if it tastes good). Kricket had other plans while I was trying to make this recipe (see the temper tantrum because I don’t know why? maybe I looked at her wrong?). So unfortunately you don’t get to see everything on this recipe. I don’t know what was happening on Friday I guess it was just one of those days. I was going to make InstantPot Cauliflower Mashed Potatoes to go with the fried chicken and I didn’t read the recipe ahead of time … I needed a steaming basket which I didn’t have at the time but I do now. So I sautéed the head of cauliflower in two tablespoons of butter and heavy cream. This is the same method from Southern Keto’s Cauliflower Mash I just didn’t put it in the blender when I was done. Kricket likes have something to grab and isn’t crazy about using a spoon yet. I also sprinkled the cauliflower with ranch seasoning. It was VERY tasty!
Now onto the chicken. The recipe that I used was from Southern Keto on page 182 and this recipe has 2.1 net carbs and it’s gluten free. Isn’t that AMAZING for fried chicken?! First, I wasn’t big on the seasoning that was used in this recipe. Natasha Newton who, is the author of Southern Keto, I personally feel like she uses Paprika a lot in her recipes! Maybe she used it for color I don’t know and maybe I didn’t get the batter mixture mixed up enough with the whey protein but that was the other thing I felt like the breading almost disintegrated in your mouth instead of giving you flakes like traditional fried chicken.
I fried the chicken in batches. I did one at a time and I did use a 5 qt pot. I wanted something kind of high because of the splatter from the oil. I also figured out after the first piece of chicken to dip the chicken in the egg wash then in the batter and then repeat. The batter was then thicker and stuck to the chicken better. When I started out I was using metal tongs but the metal tongs weren’t gentle enough on the chicken and was making the batter fall off. I then switched to my tongs withe the silicone tips and they worked great. Also, they didn’t melt which was my main concern and why I didn’t just start with those tongs. The recipe says to cook for 10 minutes, which I did, but I flipped the chicken every two minutes. Also, I used thighs not drumsticks. Not that it matters.
The chicken was very juicy when it was all said and done. I’m now spending this week tweaking the breading and the seasoning. I do think this recipe had a great concept but it’s not what I’m looking for. She has several other recipes in her cookbook that I think the breading was delicious like her Fish Sticks (page 172) and Salmon Croquettes (page 186), which I’ve also made into crab cakes.
David has a showing in Wichita Falls today and I have to take Kricket to her pediatrician for her 15 month check. So he said that he would pick up a few packages of drumsticks for me and I can try this thought out. He’s ready for some fried chicken!
