My Copycat Version of California Pizza Kitchen’s Focaccia Bread

I guess California Pizza Kitchen has closed?! The one that’s by me in Dallas on Preston is closed for good . . . Not sure what’s up with that because they were ALWAYS busy. My favorite thing to order from them was their Focaccia Bread and the barbecue chicken pizza … YUM! I’m still able to get the barbecue chicken pizza in the frozen food section at Target and it’s Gluten Free!! WOO HOO!!

Now about the Focaccia Bread. I use the bread / pizza crust recipe from Southern Keto. Follow the directions however I suggest using a silicone scraper to mix the batter, instead of using your hands, because it does get pretty sticky! Once you have the dough in the shape that you like take a purple onion and make one thin slice, then cut that slice in half. Start pulling the onion pieces apart and placing them all over the dough. See the first picture for reference. Then sprinkle dried rosemary all over the dough. Cook dough according to the directions in Southern Keto on page 184.

While the dough cooks you’re going to make the tomato mixture. You’re going to need a smallish glass bowl with a lid. Take one beefsteak tomato or any other large tomato and roughly chop. Put this in the glass container. Take 2-3 FRESH garlic cloves and slice them then chop. You need to use FRESH garlic and not pre-minced garlic because you don’t get the same flavor. You don’t get the same spice from the minced garlic (I tried). Then take extra virgin olive oil and drizzle all over the tomatoes and chopped garlic. Stir until well combined. Put the lid on the bowl and stick this in the fridge. You could also make the tomato mixture the day before (which is what I suggest doing) and let all of those delicious flavors marinate overnight.

Take the bread out of the oven when it reaches your desired color (I know everyone has a different opinion on this, LOL!). Use a pizza cutter to cut the bread into fourths. I like to cut the bread vertically in half then horizontally in half. I then continue cutting each of those sections in half until I get the size that I want. Top the bread slice with a spoonful of the tomato mixture! Enjoy with a glass of my favorite Chardonnay (Stag’s Leap Chardonnay) as a wonderful appetizer or light meal.
