Right now Kricket wants to eat when she wants to eat! We’re working on patience! Especially when it comes to food.
This was an easy and quick weeknight dinner. Here’s what you need:
- Chicken thighs (if you can get skinless and boneless that’s what I’d recommend) I only made two but there was enough sauce for a third thigh
- 1/4 cup Frank’s Red Hot Sauce
- 2 Tablespoons Butter
- Fresh Cracked Pepper
Melt butter in a small saucepan. Once it’s about half way melted add Frank’s. Be careful once it gets hot enough it will splatter so turn the heat/temperature down and watch. Once your at a simmer add the fresh cracked black pepper. I don’t know what it is but the black pepper actually turns the heat down on the Frank’s. I did about three turns on my pepper mill. So taste and use at your own discretion.
I normally use a ziplock bag to coat my chicken with the Buffalo sauce but we only have the GIGANTIC ones and I felt like that was a waste so I used a plastic container. I put both pieces of chicken in the container then poured the sauce over the chicken.
Make sure you use a container that has a lid! Secure lid to container and shake, shake, shake! Next remove chicken from container and put in air fryer. FYI, I used tongs. When I use my hands I feel like the Buffalo sauce comes off.
Cook on air fry mode (400 degrees) for 18 minutes then flip and cook for another 18 minutes. You can also cook these in the oven at 400 for 40 minutes however you won’t have the same texture. The air fryer really gets the sauce dry and into the meat.
I also served this with steamed mixed vegetables and cauliflower “rice” medley.
I put the cauliflower in a medium skillet still frozen but broken up. Two Tablespoons of butter and two Tablespoons of heavy cream, pour that over the cauliflower rice and cook until all of the water is cooked out! Most people don’t cook the cauliflower long enough which is why it’s soggy and gross! As the cauliflower thaws you will see how much water comes out of it. Stir constantly really getting the cauliflower mixed in the butter. Once the water is gone add in some fresh cracked black pepper. I put in two-three turns of my pepper mill. It’s so flavorful and takes under ten minutes to make!
I didn’t eat the mixed vegetables since it has corn and carrots which makes my blood sugar spike. Frank’s red hot has zero carbs and zero calories which makes it an excellent choice to season food! Butter has zero carbs and heavy cream has zero carbs. So for the chicken thighs your looking at a zero carb main course and three net carbs for the cauliflower medley. Such an easy and flavorful meal! I also added a small salad with ranch dressing for an extra three net carbs to round out my dinner.
