August Bookclub Pick

This month’s bookclub pick is Keto Instant Pot by Maria Emmerich.

If you read my post Keto Slow Cooker Chicken with Mushroom Sauce than you know I’m having issues on Sunday! I REALLY wanted to find a Keto Slow Cooker cookbook for this month’s book club but I can’t find one that I like. I was randomly looking for a recipe in this cookbook when I noticed at the bottom of EVERY recipe there’s a slow cooker graphic with directions on how to make each recipe in the slow cooker instead of the instant pot!

I’ve been reading through this book for a few months. As you know each day on the meal plan I try to make it under 15 net carbs. That was one thing I found a little bit more challenging with this book, the dishes have more carbs than our previous cookbooks. Since I am diabetic I do count carbs pretty religiously! So I’ve altered my daily intake to allow for the carbs at dinner. I’m still eating breakfast, lunch, two snacks and dinner but my meals earlier in the day have fewer carbs. If you saw my Instagram Stories a few weeks ago thank you know I just got a treadmill. I’ve posted my treadmill before but I’ll post it again for reference.

August's Book Club Pick.  We're using the slow cooke directions instead of the instant pot!

I’m NOT proud of this at all but I haven’t worked out since I was pregnant! I’m not back to my usual speed of 4.0. I’m only at 3.7 so it’s a fast paced walk. My knees are shot from dancing, cheerleading, life! So I don’t run but the speed I have it set at you could do a little jog. I still can’t go for the full hour so I’ve been breaking up my routine with thirty minutes in the morning and thirty minutes later in the day when Kricket takes her nap. I’ve been noticing that my glucose numbers increase when I exercise. Which is GREAT since they’ve been low the past few weeks. I have a doctors appointment this Thursday with my endocrinologist so I’ll let you guys know how that goes!

As for the meal plans I’m keeping all weeknight dinners as simple as possible. My mom worked full time and I remember the last thing she wanted to do was come home and cook a huge meal. The recipes that are more time intensive I’ve saved for Saturday and Sunday.

Crock Pot – I have a few Crock Pots and this one is by far my FAVORITE! It’s so easy to use and it has the warming feature.
If you want one that’s a little bit nicer and can sit on your countertop this is my favorite.
Keto Instant Pot Cook Book
If you’re not using these then you’re doing it wrong! LOL Seriously these things make cleanup a BREEZE! Just pull it out, tie it up and throw it out!
