Use the Cheese and Charcuterie board recipe in our April book club pick, Simply Keto on page 126 but mix it up a bit with a spooky Halloween platter and scatter some fake spiders on your delicious hor d’oeuvres!
Pre Dinner Cocktails:
Starter: Pumpkin Soup (serve in individual pumpkin soup bowls).
Cooking Tip: the cookbook suggests using ranch dressing or honey mustard. I used the honey mustard recipe that’s in the Simply Keto cookbook on page. This was the most delicious meal! The recipe calls for three tablespoons of cheddar cheese. I only used two and I think that was plenty. I think it also depends on the size of your chicken breast. The recipe says to drape the bacon over the chicken. I didn’t think that looked very pretty. I’d recommend laying the bacon on the prepared baking sheet then placing the coated piece of chicken on top of the bacon and then fold the bacon over the top and tuck under. This will also give a more mummy effect!
Sides: Witches Fingers AKA chopped up Asparagus and Witches Brains AKA zoodles.
