Ingredients:
- 1 Tablespoon canola oil
- 1 Tablespoon parmesan cheese
- 1 Tablespoon almond flour
- 1/4 teaspoon xantham gum (this is the one I use)
- 1 teaspoon french fry seasoning (I use this one)
- 1/2 of a Jicama
Tools Needed:
- Sharp Knife
- Cutting board
- Colander
- Paper towels
- Mixing bowls
- Measuring spoons
- Baking sheet lined with parchment paper
Directions:
- Preheat oven to 425 degrees
- Wash Jicama
- Cut the ends off, slice the jicama to about 1/4″ thickness, then cut those into fry strips.
- Wash the jicama strips off and pat dry with your paper towels
- You’ll only want to cook as many as you can fit on your baking sheet. They need to have room between them when they cook. I did 1/2 of a jicama at a time.
- Place the dried jicama in one of your mixing bowls
- Pour the canola oil over the jicama and mix until well combined
- In a small mixing bowl mix the almond flour and parmesan cheese cheese until well combined. Pour that over the oiled jicama and stir until well combined.
- Next sprinkle xantham gum all over the fries. Do this very slowly and then stir gently.
- Add the french fry seasoning and continue stirring. The fries will start to have a nice breaded / orange texture.
- Once everything is well combined (again be gentle, you don’t want the breading to fall off!) Place the fries on the parchment lined baking sheet. Make sure there is space between each fry.
- Cook for 15 minutes then flip and cook another 15 minutes. Tip: I tried these with Primal Kitchen’s Unsweetened Ketchup and Kraft’s Ranch Dressing … the ranch was waaaaay better! Enjoy!
