My Review of Sugar Free / Gluten Free Key Lime Pie Bars (2.4 net carbs)

With Memorial Day weekend approaching I wanted to try out some summer desserts. I thought of Key Lime Pie and I loved that it was in a bar form. So much easier for a toddler to eat, especially since she enjoys eating with her hands!

This recipe is made with a shortbread crust and it’s DELICIOUS! It was so good I’m looking for more shortbread recipes. It was that good.

Our grocery store was out of cream cheese so after a ton of research on what I could use as a substitute I discovered that sour cream was the number one choice on a ton of websites. I still think the cream cheese would have been better and the bars would have firmed up more than they did, but they were still good.

For the shortbread crust I used the brand Swerve for the sweetener and for the Keto Condensed Milk it calls for two different brands of sweetener. However, in the notes section it says that if you’re using the milk immediately you can use Swerve, which is what I did.

The recipe says to add 1/4 teaspoon of xantham gum to the condensed milk and wait 10 minutes. If it’s still not thick add another 1/4 teaspoon. I was about to add the additional 1/4 teaspoon when my 10 minute timer went off. I tasted it one more time and it was the perfect thickness. No need to add any more xantham gum, at least not for me.

Unfortunately, my Key Lime Bars didn’t come out looking like the recipe. However, a little tip; 1. Use cream cheese if you can find it. 2. Buy extra limes for garnish. I didn’t think of that so I used powdered Swerve and green sprinkles, lol! 3. The recipe says to let the bars cool completely in the pan. Once they’re cool then put the pan in the refrigerator for one hour. My tip is to let them sit in the refrigerator overnight. They were so much firmer and really had the texture of like a lemon bar that you could hold!
